Sweetened Coconut Flakes for Your Cake!
Most coconut cake recipes call for sweetened coconut flakes. For my cake I use Let’s Do Organic’s 100% Organic Coconut Flakes. Personally, I love them because of the large shaved-like shapes as opposed to the traditional shredded variety. I use them as a finishing touch on my Happy Holiday Coconut Cake which gives it a most beautifully textured, decadent look that everyone loves.

Coconut cake, sigh!!! In our home, especially for my husband, no holiday meal is complete with a freshly baked coconut cake!
As a huge dessert lover myself, I love to bake. Watching and helping my mother in the kitchen has instilled in me a love for preparing great meals for my own family. My mom is both an excellent cook and an amazing baker. She bakes everything from scratch. When I insisted on baking my first cake, she felt that my first serious foray into baking should start with a boxed cake – a Pillsbury Plus yellow cake with chocolate frosting. She taught me how to add a little “extra” into the batter to make it taste even better and it did! She proudly declared that I made the “best boxed cakes that she ever tasted!” Those words, along with how quickly my dad and brother devoured my cakes, meant a lot to me.
My New Beauty/Work Room
In the home that I grew up in, my bedroom was the tiniest room in the house…I mean shoebox tiny and in serious competition with the bathroom as far as size was concerned! It was just big enough to fit a twin-sized bed, a little vanity desk/mirror set, a chalkboard, my record player, a chest for my selective collection of toys and a small closet for my clothes. I would spend many hours in there reading, doing my homework, playing with friends, dancing and listening to my favorites albums over and over again. Just writing about it and recalling the comfort that I felt in my room gives me an overwhelming feeling of nostalgia. That room was my world from the late 1960s up until I moved into my own place in the mid-1980s. It was a personal space of my very own and I loved it.
